Passionate peach (top left) The four-tier Peach Passion cake combines hazelnut génoise sponge cake with a rich passion-fruit mousse and fresh sliced peaches. Enrobed in fondant, the cake is accented with an intricate design named "Indore" after a city in India, adorned with marzipan peaches. In the limelight (top middle) For key lime pie lovers, this four-tier coconut-milk cake is embellished with tangy key-lime curd and cream cheese frosting, then cloaked with lime fondant and accented with white piping accents reminiscent of the gingerbread trim found on some historic homes. Strawberry Dream (top right) A dramatic cascade of apricot-glazed fresh strawberries and handmade sugar gum paste flowers evoke the bounty of summer. The four-tier vanilla chiffon cake is filled with vanilla bean Bavarian cream, strawberry jam and wild strawberries, then blanketed with white-chocolate fondant and trimmed with green piping. Citrus sunburst (bottom left) This stunning five-tier cake features alternating lemon, lime and orange  layers filled with orange mousse and finished with a European buttercream icing, draped with alternating layers of white and sage-green fondant. The allure of apricot (bottom middle) An apricot miroir glaze tops an imprinted almond bisquit jaconde layer, with alternating layers of pistachio sponge cake, apricot mousse and milk-chocolate crémeux with morello cherries inside. With a cherry on top (bottom right) Perfect for cherry blossom time, this three-tier cake looks traditional, but inside it's a Black Forest Torte, with chocolate mousse and cherries blanketed between layers of cherry brandy-splashed Devil's Food cake.
